Any time I start-up,

I get the start-screens, but before the menu pops up, there's an
arrey-access out of bounds error?

Anyone knows a solution, tried reinstalling the pig but no go

If you delete the folder with the FM2007 settings then the game will use default settings the next time you run it (make sure the game isn't running when you're doing it).
