Sorcerers don't memorize spells like other classes. Instead, they
permanently learn certain spells, which they can cast at will, but are
limited to a certain number of spells of each level until they rest.

This means, as you observed, that when you cast one of your level 1
spells, the number of times you can cast that spell again, or any of
your other level 1 spells, goes down by one.

So i cant unlearn spells as a sorcerer? Didnt nwn1 allow the unlearning of
spells upon lvl up? Ive got to the stage where some spells (3rd lvl i think)
could be of more use, eg bears endurance, bulls strength instead of that
sh*tty electric spell i chose, and nwn2 doesnt seem to let you forget
spells.
Didnt exactly explain what the top numbers mean yet. I get that if i cast a
2nd level spell that the amount of 2nd lvl spells i can cast decreases by
one all round now, but still, what do the top numbers mean? I think they can
be ignored, but i am however curious, google isnt proving very helpful.

I assume you are talking about on the quick bar that you can drag spells to
from your "book". the top numbers there "1,2,3... 8,9,0,-,=" are the
keyboard keys you hit to access them.

You should be able to unlearn a few spells, but it's along the lines of
1 spell every 2 levels, of a level lower than your highest level spell.
So it's much more restrictive than it used to be. I'm pretty sure
I've done this with the sorcerer you pick up as an NPC.

Here's the way it's supposed to be done, but I've no idea if NWN sticks
to this rule:

SRD Quote:
"Upon reaching 4th level, and at every even-numbered sorcerer level
after that (6th, 8th, and so on), a sorcerer can choose to learn a new
spell in place of one he already knows. In effect, the sorcerer
"loses" the old spell in exchange for the new one. The new
spell's level must be the same as that of the spell being exchanged,
and it must be at least two levels lower than the highest-level
sorcerer spell the sorcerer can cast. A sorcerer may swap only a single
spell at any given level, and must choose whether or not to swap the
spell at the same time that he gains new spells known for the level"
