It's not really that difficult. Personally I can remember the hands
quite well, the only ting I forget is the ranking

No, the bets are done in rounds and if the others don't bet any more
money you already did, you can't increase either. I hope that makes
sense.

interesting.

Or you fold and lose your current bet without seeing your opponents cards.

You can limit the bets before you start playing like 10 pounds every
raise max. That way it doesn't get out of control. After that you can
ask to raise the limits, but everybody would have to agree.
