Calling what Descent has a "flight model" is a bit generous, but it
conveys the idea. The only game that I can think of is Forsaken. It's
a bit old now, but I remember the graphics were impressive when it came
out. I think it was one of the first DirectX games. The other poster
refered to IWar/IWar2. IWar along with Terminus has what I'd call a
flight model, but it's nothing like Descent. However, if it's strafing
that you are looking for those games deliver. Also Freelancer has a
strafe mode.
