The weakest Demon Gating is a Level 7 Spell, which you can easily get
without doing all Quests before going to Spellhold.

If you want Imoen to be at a level comparable to the rest of the party, it
behooves you to rescue her as soon as possible. That means just raising the
money with a preliminary quest (like clearing out the trolls from Nalia's
castle), choosing whether to side with the thieves or the vampires,
completing the tasks set by whichever ally you choose, and going right to
Spellhold.

The OP wrote that he had Jaheira, Cernd <shudder>, Minsc, and Nalia in his
party (besides Imoen and his own fighter). So he probably completed the
Nalia quest and the Trademeet quest before heading to Spellhold -- but the
only person in the party who could cast Cacofiend would be Nalia, and she'd
need a lot of experience (split at least four ways) before she could reach a
level where she could cast it -- not to mention the fact that they'd have to
find a Cacofiend scroll somewhere. (Memory fails me, but I think there might
be one for sale in the Copper Coronet after you free the slaves and their
children. Of course, spending money on the scroll will delay going to
Spellhold.)

Now here's another question: If you follow your suggestion of casting
Protection from Evil on your party then cast Cacofiend, gating in another
demon to fight the Balor in the Underdark, if your demon wins, do you get
any experience for killing the Balor? I'm under the impression that since
the demon isn't under your control, you don't get any experience points at
all. Also, what if the Balor makes mincemeat of your cacofiend? (After all,
as you mentioned, Cacofiend is the WEAKEST demon-summoning spell.) Aren't
you once again desperately trying to keep your characters from being Held
and killed one by one?

I'm not disputing that you get xp for whatever YOU kill. But I don't think
you get xp for what a gated demon kills, since the demon isn't your ally;
it's not "green." If you'd summoned elementals or invisible stalkers and
THEY killed the Balor you'd get xp, since they're your allies. Or if your
gated demon ALMOST killed the Balor and you just happened to administer the
killing blow, then you'd get xp. But you don't get xp for creatures killed
by neutral (blue circles around them) or hostile (red circles around them)
entities. The summoned fiend won't attack your party if you've got
Protection from Evil cast on all your party members, but it's still hostile.

protection from evil, your summoned demon will not harm you

after defeating the Balor, you can attack you summoned demon and kill it.
