Without question, Falcon 4.0
If realism of systems is what you are after, I GUARANTEE that Falcon 4.0
will not disappoint you, and I'm not just saying that because I'm biased.
(I first got hooked on Falcon with 3.0 back in the early 90's.)
Brief history: Falcon 4.0 was first released back in 1998. It was a very
aggressive attempt to outdo the excellent previous Falcon 3.0, which was
mainly known for it's unprecedented dynamic campaign. The developers for
4.0, in their attempt to expand Falcon's depth of realism, really "bit off
more than they could chew" at the time. As a result, the original Falcon
4.0 was very buggy. But, it was also a realism level never seen before. It
became known as the "best damn combat fighter sim of all time", and the
"worst damn combat sim of all time" -- by the same people! About a year
after it's release, the Falcon developers (Falcon team) released a patch
which resolved many of the issues, but not all. On the same day that the
patch was released, Hasboro announced that the Falcon Team was being layed
off. A few days later, the entire source code for Falcon 4.0, "accidently"
found it's way onto the internet. Draw your own conclusions here. This set
off a wave of open development communities for "addons" to Falcon such as
the SP Packs and BMS. To install the various addons, you had to do the
installs in a certain order (starting from a fresh Falcon and patch
install), which became known as the "Falcon Dance". Development for Falcon
continues aggressively today, check out:

Longer story short: Falcon 4.0 more recently was re-developed by another
house (using some of the addons, plus their own work) to re-release it as
"Falcon 4.0: Allied Force" (F4AF). F4AF is very stable. Anyone wanting to
start with F4, I'd definetly point them in the direction F4AF, especially
since you can get it for a measly $20.
You won't be disappointed.
