I remember a document describing the inner workings of Creatures: the
learning mind, the chemical reactions, etc.

Does anyone know where I can find this documentation?

(Yes, I posted this to the forums as well. Please don't flame me for
searching high and low.)

Places to start looking:

http://fp.cyberlifersrch.plus.com/creatures.htm
http://fp.cyberlifersrch.plus.com/articles.htm (probably what you're
looking for)
http://www.gamewaredevelopment.co.uk/cdn/
http://www.double.co.nz/creatures/

Since you seem to be concentrating on the biochemistry in your forum
posts, these might be useful, too:
