I play Spirit Marionette on an untapped vampire, who tries to block
and succeeeds. In the resulting combat I play superior Form of Mist an
continue the action, what happens? Do I still take control of the
vampire eventhough it's not longer untapped? If so, I return control
after the next action, right? And I could choose to Force of Will
bleed with it if I wanted to?

No. The tapped vampire is not a legal target. The action (if it remains
unblocked) will fizzle at resolution.

Although if you do steal and untapped vampire and then tap it somehow
before the next action - for example, using the Prince of Paris and the
Louvre - and the stolen minion had Fortitude, you could use Force of
Will.
