A given creature type always has the same "size" soul. Some creatures
(like dremora and NPCs) have souls which will only fit black soul
gems. (So "black" is notionally one size larger than "grand".)
More powerful creatures generally have larger souls.

With the exception of Azura's star, each stone can hold only a single
soul, once. If you put a petty soul in a grand stone, that's a waste
but once it's done, it's done. You can put more in or get that one
out, so you might as well just use it up.
When you capture, the game is _supposed to_ put the soul in the smallest
empty gem in which it will fit. There is some question as to whether this
always works right.

When you equip the stone from your inventory, you should get a popup
asking what item you want to charge. In the upper right it should show
how much charge your stone has.
The charge depends on the size of the soul in the stone, and is always
the same for a given size soul. If you try to give an item more charge
than it can hold, the item ends up full and the extra charge is
wasted.
Varla stones fill all the items in your inventory, but are scarce (and
AFAIK, don't respawn).
