Which version of CFS? There have been three to date.

Hmmm, the draw of just about either version of CFS is that you can
upgrade it as you'd like - planes scenarios, the works - using third
party software available in payware, freeware & shareware. I have
little interest in WWI, so I can't say how well the add-ons get it, but
they should have some appeal, and given that there aren't any
complicated avionics or other systems, a CFS WWI mod should deliver the
goods.

WTF - doesn't sound like a simulator at all. The last KB-only sim I've
heard tell of was Accolade's "Blue Angels" from decades back.

I doubt that there's really a market for new sims at all - there are
plenty of existing sims available for a fraction of their original
cost. The key thing now is for hardware and mods to get the most out
of existing software. Try googling CFS & WWI - you're bound to come up
with something.
BTW, what hardware do you have?
