I've been playing BF1942 for a while, and have always wondered whether
machine gun fire (from planes or otherwise) actually harm destroyers or
carriers.

Am I causing damage, or just wasting ammo?

The latter.

Tank rounds are effective (if not tremendously so) as are mortar rounds
if you run the analogous maps on the WW2 mods to BFV. Small arms fire is
not, nor are grenades (or C4 if you run the etc.) if you happen to end
up on a hostile ship.

That's the way I remember it, too. And like you said, tanks rounds are
effective, and it takes a LOT to sink the ship. So even if MG fire was
effective, I can only imagine how long you'd have to fire into the ship.
