There doesn't seem to be much control over push-back with default aircraft.
Its either straight back or straight back with a left or right tail turn
after one aircraft length. Sometimes you need to do a straight pushback,
stop it then do another push-back with a turn to get the distance correct to
clear other parked aircraft.
Some payware aircraft allow more control. LevelD's 767 allows you to enter
a distance of pushback and angle of turn too.
