Is there an addon that remembers what I paid for something at the auction
house so I know the minimum I can sell it for too still make a profit.

Currently writing individual items in a book is there an addon that would
automate this?

BeanCounter, an addon you can find in Auctioneer itself (and which
works with it) keeps track of all your "transactions" (buy-prices and
sell-prices, net income, etc)

Try it

While Auctioneer is a good tool, it does not do what the OP asked for. I am
not aware of a tool that keeps track of your 'buy-price'. But then, I am not
working the AH for buy-low-sell-high...

Cheers

Ouch, that will teach me to investigate new features added to old addons.

Mea culpa
