I just learned that a paladin does not gain the extra spells that a
cleric would from having a higher wisdom, is that true? A chart in the
back of the manual says that another bonus for high wisdom is 'Magic
Defense Adjustment'. Is this against all spells? Is that defense in
the form of extra saving throws?

It's a bonus to all saving throws ... but although it's in the BG1 and
2 manuals, it's not actually implemented. So no, there is no point in
non-clerics having decent WIS.

There is something in one or more on-line FAQs that contradicts this
statement. I don't recall the specifics just now, but there's at least
one aspect of the game where higher WIS brings a character some benefit.

Wisdom seems to be useful only to clerics, druids, and mages who want
to make use of the Wish Spell. And for any class who wants a good lore
rating. I don't think it serves any other purpose in the game.
