There is some truth in them, though. Take Razorgore for example. All the
guides talk about using paladins to do this and that. They mention shaman
totems.

Being a warlock on mage duty maybe I'm missing something, but other than
maybe some shield pulling (but I don't think we do that either - it's all
warriors and hunters), I don't see that paladins have anything special to
do at razorgore. *

On my alliance realm we were the fifth raidgroup to go to razorgore and
our tactic consists of kiting everything (except mages, who get killed)
with one single paladin. We were the first group doing it that way and
now lots of others copied this strategy. If you want to see how it
works, I still have the old videos of that online.
All other groups used warriors and/or hunters. We didn't and still don't.
The advantage is that one single paladin kites them all. He can have run
speed enhancement, he can take some hits if they get close. He can
shield himself. He may be able to heal himself a bit when walking
correctly (has to wait a bit before jumping down anyway in order to not
let the kite short-cut).
Many advantages, so we never ever even thought about using a warrior
instead.
Other groups kite dragons/orcs differently or sleep them. We don't we
just kite everything on one single person. As soon as we have "the
perfect kite" there's basically nothing to do for all other players.
Just stand around and wait for the eggs to be popped. No enemy is
killed, no respawn comes, no more mages. All enemies in kite trying to
reach our pally.
So depending on your groups tactic, the pallies are the major players
here or nothing special.

We didnt have the pallies as main kiters, but for awhile we did have them as

We're identical on the mage thing (of course, they have bad habits), but we
kite the rest with a bunch of warriors and hunters - 5 at least. Each
corner is staffed with a 5-person group that is responsible for killing
mages as they appear. As a warlock I keep my succubus out for this fight so
I can hold one mage until someone picks them up while killing another. It
works well - we've never wiped on razorgore. In the last few fights we've
had a paladin tank for the final takedown, but that's mostly because he's
incredibly well geared and nearly unkillable.

All eggs in one basket - sounds dangerous to me. It's bad enough when one
of the kiters gets a 10 mob train and stumbles - I can't imagine how you
recover if that one paladin bites it.

The only sleeping that gets done is if there's a loose one - we sleep or
seduce any untrained dragons or orcs until the next kiter comes by to pick
them up. *

Oh it happens from time to time. What we do then is what we need to do
anyway, we transfer the kite. Razorgore is always being controlled by a
Paladin, so if a kite fails, the controlling paladin moves him to the
middle of the room, performs Razorgore's AOE and thus catches "all"
mobs. Then Razorgore is being moved into a corner (collect mobs) and
then released. At this moment the kite has been transfered to the new
paladin who is now being hunted by some 40 angry mobs. Another paladin
now takes over the orb and continues.
You need to do that anyway because at the start of the fight not all
mobs are in the room, so we start a small kite soon and later "upgrade"
to the big kite. In any case, it removes quite a lot of mobs from the
combat.

Only if a mob is not in the kite we use this. Sort of last resort
tactics or for the last three or so mobs who didn't spawn in time to
make it into the last(big) kite.
