Is there any way using Magic Workstation, apprentice or The Official
Magic Online to watch the games that other people are playing? Also is
there any way using Magic Online to play friendly/unrated games with
cards that you don't own?

I believe that in a Premiere Event tournament on Magic Online, you can
watch other games, or at least the games in the top 8. Not sure about
other systems, but it wouldn't surprise me if they supported network
play that they'd also support that.

Only in the New Players learning room (not sure exactly what it's
called in-game), and there you're limited to just playing the 5 theme
decks from the latest Core Set. But if that's all you and your friends
ever want to play with, you don't have to spend a cent on Magic
Online. Smile

And don't forget the Pro Tour top 8 coverage webcasts on Wizards's
site, if you're just looking to spectate games online.
