I see two different scenarios here: The mob was allied with the Greys,
and because the mob helped the Greys by creating up a rather lavish cover
in Las Vegas, the Greys helped the Mob or rewarded Siegel by taking him
with them to do something. Not yet sure what exactly. In any case, the
CIA (or some other agency) found out and used quite a lot of resources
to shoot down or sabotage the Greys' getaway vehicle.

More likely is that it was the CIA (or whoever) that was in cahoots
with the Greys, and plans to abduct Siegel. Mob finds out, and either
sabotages the ufo the CIA intended to use, after which the CIA just
shoots Siegel, or the mob cares enough about the issue to just blow
up the ufo with their man inside, and the real secret of Area 51 is
that there weren't aliens in the ufo, but also a human.
