When one resolves Replenish with both Opalesence and Humility in the
'yard, how do we ascertain the timestamp order - are the creatures x/x
or 1/1 now?

The rules do tell how to determine this:

418.5e An object's timestamp is the time it entered the zone it's currently
in, with three exceptions: (a) If two or more objects enter a zone (or zones)
simultaneously, the active player determines their timestamp order at the time
they enter that zone. (b) Whenever an Aura, Equipment, or Fortification
becomes attached to an object or player, the Aura, Equipment, or Fortification
receives a new timestamp. (c) Permanents that phase in keep the same
timestamps they had when they phased out.

Case (a) there is what you're looking for: whoever's turn it is decides how the
two are timestamped.

Active player chooses:

Here's what I think the various situations are that you need to be
familiar with:

Opalescence - Humility

Opalescence is just an enchantment.
Humility is a 1/1 enchantment creature with no abilities.
Other enchantments are 1/1 enchantment creatures with no abilities.
Other creatures are 1/1 creatures with no abilities.

Humility - Opalescence

Opalescence is just an enchantment.
Humility is a 4/4 enchantment creature with no abilities.
Other enchantments are X/X enchantment creatures with no abilities.
Other creatures are 1/1 creatures with no abilities.

Opalescence - Opalescence - Humility

All creatures are 1/1 creatures with no abilities.
All enchantments are 1/1 enchantment creatures with no abilities.

Opalescence - Humility - Opalescence

All creatures are 1/1 creatures with no abilities.
First Opalescence is 4/4 enchantment creature with no abilities.
Humility is 4/4 enchantment creature with no abilities.
Second Opalescence is 1/1 enchantment creature with no abilities.
Other enchantments are X/X creatures with no abilities.

Humility - Opalescence - Opalescence

All creatures are 1/1 creatures with no abilities.
Humility and the Opalescences are 4/4 enchantment creatures with no
abilities.
Other enchantments are X/X creatures with no abilities.

I encourage you to verify these by going through the layers and
applying all of the abilities, remembering that once an ability
has started to apply in one layer, it will still apply in later
layers (if applicable) even if it gets removed in layer 5.
