Since re-installing FSX last week, I notice that the heads of pilots
in the default light aircraft (C172, Baron) are permanently turned to
look in the 10 o'clock direction, whereas they used to look directly
ahead, and turn to the side in co-ordination with the rudder.

Whilst this does not affect the performance of the aircraft, it annoys
me (yes, I realise that compared to global warming it is relatively
insignificant).

I haven't been able to find what controls this and would like to know
if there is a way of correcting it.

One benefit of the re-install is that it corrected the black polygons
which I had asked about here a couple of weeks ago, so my airports
look better.

The same with a C-172, etc. When you're flaring you can't
see straight ahead. Also, you get better perception of
height above the runway when looking to the side. Trying
to do an approach while looking to the side would be a
bit difficult, unless you're in a crab.
