When flying big jets (in the real world), what do pilots actually do
to "de-rate" the engines, say if the plane is flying empty?

Is there an FS9 equivalent?

Two options or a mixof both,

1st: - you can switch from one engine rating to another passing by the fms.
You choose the appropriate rating at the right moment. As you wrote, if u
are empty u can choose a less powerful rating to save life of your engine.

2nd: - still by the fms, you can enter a higher temperature than the real
outside one which will also give a lower rating (technic called flat rated).
To do that tables are published by the constructor linked to the outside
temp, mass, altitude of the airport,...

Interesting.. If you have a jet that pre-dates the FMS, then tables
are the reference? Wasn't that the job of the Flight Engineer? To
man the manuals? Was the FE job eliminated by the FMS? And
many captains were FEs before moving up to the `front seat?´

Further.. a good FD (AIR / CFG) is one that can be flow `by the
numbers.´ After a while, if simmers have a preferred type.. they'll
become intimately familiar with the engine settings / tables. It's
almost like second nature then. :]
