Gun cursor moves around too much, sort of jiggles... can this be fixed
or just a product of guns being used as joysticks?

Its a bad pot or broken wires to the pots on the gun.

Usually a dirty pot. 5k linear taper. Try removing them and spinning
rapidly or drill a small hole with the bit in reverse and spray some
cleaner into it. Same problem as the T2's

Ther are 2 pots in each gun.
While you have the guns open. clean the area around the disc shooter
buttons and check the trigger.

The "pots" are in the gun assembly I would assume right?
