That's all well and good, but flying around in a helicopter with two
chain guns and nothing to shoot can get annoying.

One option would be to host a local "LAN game" (multiplayer -> start
local). You won't get any bot opponents (they're not much fun anyway)

Probably too late for this, never seen until now, but there is an option
when creating an LAN game called Co-Op, select it and you get bots... >> Stay informed about: BF Vietnam multiplayer vehicles on single player |

When I do that, however, I lose all the multiplayer maps and the

Yep, that's one draw back, you lose all the dedicated multiplayer maps that
have not been setup for bots and custom game, not much can do about that...
