can some one point me in the right direction I am a priest spec holy
lvl 64 w Alchemy at 345 and a herb gatherer. I seem to be stuck at
this lvl in regards to Alchemy, have I missed something?

The trainer in Shatt has everything you need for the rest of the way to
375 in regards to recipes. Mecurial Stones are yellow at 340, and Mad
Alchy potions don't go gray until 350.

You can also go to Haalrun in Zang or Daga Ramba in Blade's Edge to
learn Super Mana Potion and Major Dreamless Sleep potion which combined
can take you to 375.

Improving your Rep with all the Outlands Factions to at least honored
will allow so you to buy new recipes from them. Also there's always
checkin the AH for any recipes you dont already have to help lvl you
up.

Just FYI ~ Start thinking about which Alchemy you want to become a
master in....Elixers, Potions, or Transmutes. Then read up on the
quest chain you have to complete to earn mastery in one of those.
